Team recipes - Orange, red lentil and tomato soup
Recipes brought to you by the Epworth team. A warming winter soup with a zesty orange flavour.

Cook time: 35 mins
100g red lentils, rinsed and drained
2 x 400g tinned tomatoes
4 oranges, zested, peeled and segmented - remove any pith and chop into pieces
1 onion, peeled and finely chopped
1 clove garlic, peeled and finely chopped
1L chicken or vegetable stock
Sauté the onion, garlic and orange zest in butter gently without colouring for around 10 mins.
Add washed red lentils and stir to coat. Add tinned tomatoes and chicken/vegetable stock.
Bring to the boil and simmer until lentils cooked, about 20 mins.
Add orange segments and simmer for 5 mins.
Blend with a stick blender until desired consistency.
Season with salt and pepper.
